Cranberry and Cashew Salad
Ingredients: 1 large head of Romaine Lettuce, chopped 1 cup cashews 1 cup dried cranberries 1 can sliced pears, drained 1 cup shredded low-fat mozzarella cheese
For dressing, mix: 1/2 cup olive oil 1/3 cup lemon juice 1 tsp Dijon mustard 1 T poppy seeds 2 T chopped onion
Toss first five ingredients in a large bowl. Drizzle dressing lightly over, or serve dressing on the side. Makes 10 servings.
