Tortellini and Turkey Sausage Soup

 

 

Ingredients

 

2 Sprays of canned olive oil (such as Pam cooking spray)

1/2 pound turkey Italian sausage (can use sweet or hot to your liking), with casings removed

3 cloves garlic, minced

1 medium onion, finely chopped

2 ribs celery, chopped very small

1 package sliced mushrooms

2 quarts chicken stock

1 package fresh tortellini

1 package fresh spinach

 

Directions

 

Heat oil in soup pot until hot but not smoking. Add sausage and cook until no longer pink. Remove sausage. Add garlic, onion, celery, and mushrooms to pot and cook until tender. Then add sausage back into the pot. Add chicken stock and bring to a gentle boil. Add tortellini and cook until done (about 5-7 minutes). Add spinach and stir in until wilted. Serve with a sprinkle of shredded parmesan cheese and enjoy! Makes about eight 1-cup servings.

*Sodium level is dependent on type of stock used - best option is to go for low-sodium stock, since this is a soup and most soups are high-sodium. Low-sodium stock will greatly reduce the sodium level, but will not impair the flavor of the soup!
